Oaty Banana Bread Cookies Ingredients ✓ 150 grams room temperature butter – cut into cubes ✓ ¾ cup brown or coconut sugar ✓ 1 free range egg ✓ 1 teaspoon vanilla essence ✓ 2 medium All Good bananas – lightly mashed ✓ 1 ½ cups white spelt flour i can also use regular or GF flour ✓ 1 cup rolled oats ✓ 1/4 teaspoon baking powder ✓ Pinch sea salt ✓ 1 cup sultanas or raisins Method #1 Use a food processor (running on low) or stand mixer to whip the butter and sugar together for a minute or two until lighter and fluffier. A stand mixer will yield a slightly more creamy result. #2 Add the egg, vanilla essence and banana. Mix well. #3 Add the flour, oats, baking powder and salt. Mix until combined. Do not over mix. #4 Stir through the sultanas. #5 Chill mixture in freezer for 10 minutes to make it easier to roll into balls. Use wet hands to roll tablespoons of cookie mixture into balls and place on a large oven-proof tray lined with baking paper. Flatten using damp fingers. The cookies will not spread much when cooking so do not need a lot of space in between. You may need to cook the cookies in 2 batches depending on the size of the tray being used. #6 Bake for approximately 15 minutes at 180 degrees celsius until golden. #7 Place on a wire rack to cool.

Banana, Apple & Oat Bars Ingredients ✓ 1 ripe banana – mashed ✓ 1 large apple – grated and squeezed tightly of liquid ✓ 2 free range eggs ✓ ¼ cup coconut sugar or other unrefined sugar ✓ 1 teaspoon vanilla essence ✓ ¼ cup melted butter i could use coconut oil ✓ 2 cups rolled oats ✓ ¾ cup tapioca flour i could also use regular flour or brown rice flour Method #1 Preheat oven to 180 degres celsius #2 Whisk together the mashed banana, apple, eggs, sugar and vanilla. Add the butter and mix well. Stir through the oats and flour. #3 Grease and line a square baking tin. Pour the batter in and use the back of a spoon to smooth the top. #4 Bake for 35 – 40 minutes until golden and lightly firm. #5 Will be easiest to slice if cooled completely first (ideally in the fridge). Will last up to 4 days in an airtight container. Freezes really well.
Close Raw Perky Nana Slice Ingredients ✓ Base ✓ 1 and 1/2 cups of ground almonds/oats ✓ 2 tbsp cacao powder ✓ 3 tbsp maple syrup/honey ✓ 3 tbsp melted coconut oil ✓ 1 tsp vanilla ✓ 1 tbsp water i if too dry ✓ Banana layer ✓ 1 large mashed All Good Banana ✓ 1/2 cup of cashews i soaked for 15 mins and then drained ✓ 1/2 - 3/4 cup coconut cream ✓ 2 tbsp maple syrup ✓ 1 tbsp coconut oil ✓ 1 tsp vanilla ✓ 2-3 tsp turmeric ✓ 3 tbsp cacao nibs i optional ✓ Chocolate top ✓ 1/2 block melted dark choc ✓ 1/2 can coconut cream Method #1 Combine all base ingredients in a bowl and pat into the bottom of a lined tray. #2 Blend all the banana layer ingredients (except cacao nibs) in a blender until smooth. Stir cacao nibs through. #3 Pour banana layer on top of the base and set in the freezer for 2-3 hours. #4 Combine the chocolate top ingredients and pour on top of the banana layer. Set in the freezer for a further 1-2 hours. #5 Remove from the freezer, slice and EAT!

You may want to refrigerate the dough for 30 mins if it is too soft to handle. #4 Shape the dough into 8-10 cookies on a lined baking tray and bake for 12-14 minutes or until golden on the edges. #5 Sprinkle with sea salt and enjoy warm with your favourite dairy free yoghurt or ice cream, or on their own as a delicious treat!
Close Baked Banana, Cranberry & Oat Bliss Bites Ingredients ✓ 1 All Good Banana – mashed ✓ 1 ½ cups rolled oats ✓ ¼ cup sugar i any type will work ✓ 2 tablespoons chia seeds ✓ ¼ cup melted coconut oil ✓ 1/3 cup dairy free chocolate chips ✓ ½ cup dried cranberries Method #1 Preheat oven to 180 degrees celsius #2 Combine the banana, rolled oats, sugar, chia seeds and coconut oil in a large bowl. Use a fork to mash it all together until very well mixed. #3 Add in the chocolate chips and cranberries and mix until evenly dispersed. #4 Use damp hands (this makes it much easier!) to form heaped tablespoons of mixture into balls. Place onto a lined oven proof tray. #5 Bake for 15 minutes, until lightly golden. #6 Allow to cool completely before storing in an airtight container for up to 5 days. Will freeze well for up to 2 months.
